Winter Quinoa Salad
Instructions
1. Cook quinoa based on instructions on package. While cooking, drain and rinse the chickpeas under cold water and set aside.
2. Prepare the other ingredients. Chop your apple and rinse off your greens. Whisk together the olive oil and fresh lemon juice for dressing.
3. Once the quinoa is cooled, toss it with the chickpeas, greens, chopped apple, walnuts, dried cranberries and dressing. Enjoy!
