Winter Quinoa Salad

A festive side salad for any holiday meal

We wanted to create a healthy salad that could go with any holiday meal. We went with a Winter Quinoa Salad.

Tossed with dried cranberries, apples and walnuts, this salad makes every meal a bit merrier.

Ingredients: 

·      1 cup of cooked quinoa

·      1 can of chickpeas

·      3 cups of spinach or kale

·      1 apple chopped

·      Half of cup of walnuts

·      Half a cup of dried cranberries

·      Half a cup of olive oil

·      Half a cup of fresh lemon juice  

Instructions

1.    Cook quinoa based on instructions on package. While cooking, drain and rinse the chickpeas under cold water and set aside.

2.    Prepare the other ingredients. Chop your apple and rinse off your greens. Whisk together the olive oil and fresh lemon juice for dressing.

3. Once the quinoa is cooled, toss it with the chickpeas, greens, chopped apple, walnuts, dried cranberries and dressing. Enjoy!
