Summer Couscous Salad

A Bright, Airy, and Delicious Meal for the Summer Months

There is nothing better than enjoying a salad bursting with flavors at a picnic or barbeque. To celebrate summer, we put together an easy Couscous Salad for our families.

Ingredients: 

  • 1 cup dry Israeli couscous

  • 15 cherry tomatoes finely chopped

  • 1 small cucumber finely chopped

  • 1 handful fresh basil leaves finely chopped

  • 10 artichoke heart quarters

  • 1/2 small purple onion finely chopped

  • 1/2 cup kalamata olives halved

  • 1/2 cup of feta cheese

  • 1 tsp olive oil

  • 1 tsp balsamic vinegar

  • Salt and pepper for seasoning

Instructions

1- Cook 1 cup of dry Israeli couscous in salted water, then drain the water.

2- Add all the chopped veggies, fresh basil, olive oil, salt and pepper, then stir.

3- Serve hot or cold.
