Sweet Potato Coconut Curry Soup
Instructions
1- Heat olive oil in a large pot. Add diced onion and cook for about five minutes, until tender. Add the garlic and cook for another three minutes.
2 - Throw in the curry, chili powder and ginger powder, cook for 30 seconds. Throw in the cubed sweet potatoes, and stir to coat with olive oil, spices, onion and garlic. Cook for another 30 seconds.
3 - Add the coconut milk and vegetable stock. Add salt and pepper for taste. Bring to boil, and then reduce to heat to simmer. Cook for about 20 minutes, or until the the sweet potatoes are tender.
4 - Add the spinach and peas, cook for another three minutes or until spinach is wilted.
5 - Serve in bowl and garish with lime juice and cilantro.
